Besides the cost of the ingredients, each dish costs 10 soles per person. It is recommended that you pick 2 dishes per class; one appetizer and one main course. The reason being is that you will be eating what you make so if you pick 2 main dishes you will be eating a double lunch! Plus, it's a nice to space out the class and just enjoy what will be a delicious two course meal. But these are only suggestions; the menu is totally up to you.
There are endless delicious Peruvian dishes that you can learn to make. Some of our students end up coming back for more than one class as a result. The following are some of the most popular choices, however, Maria is more than willing to cook anything you have come across and want to learn.
Appetizers:
Ceviche- Ceviche is Peru's national dish and a source of great pride. It consists of fish and/or seafood cut into small pieces and marinated in lime juice, salt and chillies. Yuca, sweet potato and corn are typically served with it. Ceviche is a great choice to sample in Huanchaco given the fresh fish and seafood available.
Papa la Huancaina- Sliced boiled potatoes covered in a cheesy slightly spicy sauce served on lettuce and usually garnished with an olive and slices of boiled egg.
Papa Rellena-Mashed potato rolled into an oval and filled with meat/chicken and spices, then pan fried until golden brown.
Shambar- Soup consisting of lentils, pork rind and ham and served traditionally on Mondays.
Main Dishes:
Causa-A layered casserole of
mashed potatoes and fillings such as tuna/chicken, egg and avocado.
Aji de Gallina- A creamy sauce with shredded chicken served over potatoes with rice.
Escabeche de pescado- Fish sauted with onions, tomatoes and spices and served over rice.
Lomo Saltado- Sliced beef stir fried with tomatoes and onions and served with rice and fries.
